Caramelised Red Onions

OK, so I was hoping for something slightly more impressive for my first blog entry however the Stilton & Red Onion Quiche is still in the oven and not looking that great...

However, today I caramelised onions properly for the first time and they are yum! It's so easy I don't know why I've never done it before, I have a feeling that in future there will be caramelised onions with everything I eat :)

4 Red Onions
4tsp Olive Oil
15g Butter
Salt
Red Wine

Peel and slice the red onions (you might think this is the easy bit but unless you're wearing goggles the chances are you'll have to run out of the room crying between every onion).

Heat the oil and butter in a thick bottomed pan, add the onions and stir to coat them in the oil. Stir occasionally and when the onions start to brown after about 10 minutes add salt to taste. After this point you'll need to stir the onions more frequently otherwise they'll burn to the bottom of the pan.

Once they look so delicious that you can't resist sneaking a couple out of the pan to taste (around 20 more minutes) then add a splash of red wine to deglaze the pan and give the onions some extra flavour, I've also read using balsamic vinegar instead works well so I'll be trying that next time.

I'm sure these will keep well in the fridge, which is just as well as I have a whole lot left over. In about 10 minutes or so I may even have a tasty quiche recipe for you to use these onions in, fingers crossed!!

EDIT: The quiche is more like a cheese and onion omlette in a pastry casing, however that hasn't stopped Gobo helping himself to seconds and thirds! Looks like I've got the flavours right, just need to perfect my technique.
